A Better Egg {And a Breakfast Burrito Recipe}

When it comes to food labels things just aren’t straight forward anymore. I used to think buying “Cage Free” eggs was ideal until I learned what’s really going on. “Cage Free” no longer means the hens are treated humanely or have plenty of room to live naturally. Now it simply means they’re not in a cage. They can still be overcrowded in a small building, though. Talk about disappointing!

Nellie’s used to be known for having “Cage Free” eggs, but as that definition shifted they knew they’d have to find a better description. Free range eggs. Nellie’s treats their hens humanely and are even Certified Humane. Their hens have free range to scratch, dust bathe, and have real grass to peck. They have access to antibiotic free feed and fresh water at all times. Occasionally they are kept in a barn, but only if there is an outside threat, and yet they still have plenty of room to continue chicken behavior.
The hens at Nellie’s farms are never given feed with antibiotics or hormones. They truly get to live their lives as chickens are meant to, and the result is an overall better egg! Nellie’s Free Range Eggs are packed with 13 essential vitamins and minerals, high-quality protein, “good” fats and antioxidants, and all for just 72 calories each! Plus, we can feel good knowing there aren’t things like antibiotics and hormones and the chickens are treated humanely!

For our review we received two cartons of Nellie’s Eggs, a great t-shirt and other swag and a gift card with the challenge to hunt down some ingredients for a recipe. The Nellie’s eggs we received are large brown eggs.
Nellie's Certified Free Range Eggs
As you may know, I’m a simple person. We have a pretty crazy life (and the past couple of months have even been crazier than usual), so I like to keep our meals simple as well. This also ensures even our picky eater will give it a try! So I decided we’d make some breakfast burritos with our Nellie’s eggs!

Breakfast Burrito Recipe

Breakfast Burrito Recipe
(This Breakfast Burrito Recipe yields 4 burritos)
Ingredients:
6 Nellie’s Eggs
1/3 Cup Milk
1/2 Pound of Ground Sausage (For this recipe I am using Lightlife Veggie Sausage)
1/2 TBS Coconut Oil
Pepper, Salt and Garlic Powder to taste
1 Tomato
1 Banana Pepper
4 Tortillas (Any kind will do. I used wheat, but if gluten is a concern corn tortillas would work as well)
Breakfast Burrito Recipe Ingredients
Directions:
Add 1/2 TBS of Coconut Oil to a non-stick skillet.
Add 1/2 Pound of Ground Sausage and cook until brown making sure to break it into small pieces.
Add spices as desired.
When Sausage is cooked thoroughly, add to a large bowl.
Using the same skillet (or optionally use a different skillet), add 1/3 cup of milk and 6 Nellie’s Eggs. Mix well until eggs are thoroughly cooked and fluffy.
Add the eggs to the bowl with the sausage.
Dice the tomato and banana peppers and add to bowl.
Mix well.
Add the mix to the tortilla.
Wrap and serve!
Breakfast Burrito Recipe Complete
This is a recipe the whole family loves! Having a few picky eaters in our family, though, but it easy enough to leave out the tomato and banana pepper (or even sausage) for some but mix it all up for the others. I grabbed a tomato and banana pepper straight from our garden, which was amazing!
Overall, I’m so impressed with Nellie’s Eggs. They are healthy brown eggs, and I am thrilled they are Certified Humane and really care about their hens. Plus they taste great!

A Family Favorite – Baked Spaghetti {Recipe}

Oh how our family loves spaghetti. Well, we love any pasta really – except for my husband who has a very limited list of foods he likes! One family favorite and a recipe I love to use when we have guests is baked spaghetti. It’s easy to prepare, and you can even use leftover spaghetti and turn it into a new dish!
Easy Baked Spaghetti Recipe
When I verbally share this recipe I usually say “make your spaghetti how you usually do” (or use leftover spaghetti) and then go into details about the baked part, but for the sake of a complete recipe, I will share how I make the spaghetti as well! Of course, you can definitely substitute what I use for your own favorites or make your own tomato sauce and shredded cheese!

Baked Spaghetti Recipe

Serves 5-9 people
Prep time: around 45 minutes

What you Will Need

16 oz Package of Ground Beef
1 Bottle of Tomato Sauce
1 Box (16 oz/1 lb) of Spaghetti Noodles
Garlic Salt (To Preferred Taste)
8oz Package of Cream Cheese
8oz of Shredded Cheese (I use a finely shredded blend)

What to Do

You will start with the first four ingredients to prepare your spaghetti

  • Pre-heat your oven to 350 degrees
  • Bring 4-6 quarts of water to a boil in a large pan
  • Add a few sprinkles of garlic salt to the water
  • Once the water is boiling, add the spaghetti carefully to the water and bring the water back to a boil
  • Stir pasta occasionally to avoid sticking
  • While pasta is boiling, prepare the ground beef in a 10 inch or bigger skillet
  • Sprinkle the ground beef with garlic salt and brown it in the skillet

  • Drain the spaghetti
  • Combine the cooked spaghetti, ground beef, and tomato sauce in a large pot
  • Mix Well

  • Pour the Spaghetti into a 9-by-13-Inch Rectangular Baking Dish

Next you will get out your last two ingredients: Cream Cheese and Shredded Cheese. If you’re preparing your own shredded cheese, be sure to grate it finely.

  • Soften the Cream Cheese if necessary – it needs to be easily spreadable
  • Spread the Cream Cheese on the Spaghetti in the baking dish

  • Sprinkle the shredded (or grated) cheese on top of the spaghetti and cream cheese
  • Place the baking dish in the oven

  • Bake at 350 degrees for 20-25 minutes (or until the cheese is melted)

To serve, I cut it in squares like you would with a lasagna and serve with a large spoon or spatula. To use leftover spaghetti, simply add it to the pan (a smaller baking pan fitting for the amount you have left), add then follow the end of the recipe starting at the Cream Cheese. Enjoy!

It’s no secret I love Italian food. I’m pretty sure my love of Italian food is rubbing off on our children as well, which is good for me because that means I can make it more often! The problem is, though, I’ve kind of gotten stuck in a rut. I like all sorts of Italian food yet I seem to always use the same ingredients and recipes over and over again. I was in desperate need of expanding and trying new things! I was thrilled for the chance to try the Colavita Simply Italian Gift Basket!

When I received my Colavita Simply Italian Gift Basket, I couldn’t wait to open it up and check out everything! It’s not only chock full of goodies, but it comes nicely packaged as well! This automatically made me thing “What a perfect gift!”

All of this for just $75! What a great value, right? I was excited by the possibilities! The best part is they also offer a complete recipe library, so if you’re stuck in a rut like I have been, inspiration is at the click of the mouse! I got to try my hand at a new Italian Recipe from Colavita!

Eggplant and Sweet Pepper Veggie Pasta (Serves 4)

Ingredients:

  • 2 tablespoons Colavita Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 3 tablespoons chopped fresh basil OR 1 tablespoon dried basil
  • 1 jar Colavita Eggplant and Sweet Peppers
  • 1 pound Colavita Pasta
  • ½ jar Colavita Marinara Sauce
  • Salt and freshly ground pepper, to taste
  • ½ cup grated Parmesan Cheese

The only substitution I made was using shredded cheese versus grated cheese because we moved recently, and I haven’t found all of my kitchen utensils yet!
Preparation:
1. Bring a large pot of salted water to a boil.
2. Heat 2 tbsp Colavita Olive Oil in large skillet over medium-low heat.
(These can be done simultaneously, which I always love to do! Being a busy mom, I’m all about being efficient!)

3. Add the garlic and sauté, stirring often, until softened, about 3 minutes. Add the jar of Eggplant and Sweet Peppers and simmer for another 3 minutes to release the flavors.
4. Add the ½ jar of Colavita Marinara (or Tomato Basil) Sauce and bring to a simmer, stirring occasionally to incorporate all the flavors.
5. When the water boils, add the pasta, stirring to prevent sticking. Cook according to package directions.

6. Drain pasta, reserving about ½ cup of the pasta water and transfer the pasta to the skillet with the sauce. Using tongs, mix the pasta into the sauce well.
7. If the sauce seems dry, feel free to add a little of the pasta water.
8. Season with salt and pepper and serve with grated Parmesan cheese and basil.

Voila! A tasty dish the whole family loves! Even our picky 4 year old gobbled it up! This recipe takes pasta from drab to fab! It really has a lot of flavor, the texture of the pasta was wonderful, and I was truly impressed with the quality and taste of the Colavita products. We also complemented our meal with the Almond Cantuccini, which is a crunchy, tasty treat!
Of course, I still have more to use, and I can’t wait! Upon browsing on the Colavita website I also discovered they offer organic and gluten-free pastas as well!
I love the history of Colavita and love that they offer quality products the whole family can enjoy!

Tailgating with Wilton Armetale

It’s that time of year – football season! With football season comes tailgating! As a Bengals fan that lives in Texas it’s not often I get to see them play, but I was happy to discover they will be playing in Houston this year. Woo hoo! What can I say? I lived a majority of my life in Ohio, and I’m loyal to my team!
I was challenged to experiment with some recipes to see what could be used for tailgating. As a family that grills regularly – finding a recipe to use on the grill wasn’t the challenge, but coming up with a creative way to use it for tailgating was since I have never been before (crazy, right?), but I was up for the challenge! I was excited for the chance to try out a versatile bowl from Wilton Armetale.

Wilton Armetale offers a variety of flexible, durable serveware made of unique, non-toxic aluminum-based alloy. They’re so versatile!
I was really excited to try out my bowl. I was definitely intrigued by the versatility. This bowl can go from the freezer to the oven, used on the table to the fridge. So essentially I can do just about anything with this bowl, which I love! I feel like when I cook sometimes I get so overwhelmed by the dishes. I use one bowl to mix, then have to transfer it to something else to bake, then to yet another to serve, then to another to store leftovers. Well, you get the point. Now, I can do it all in ONE bowl! Amazing, right? I definitely appreciate it!
Of course, I also love that we can use it on the grill! So, my inspiration for my tailgating recipe comes from a recipe we use regularly for the grill (but has now been simplified thanks to my new Wilton Armetale bowl!), and I will note how I would modify it for tailgating!

Marinated Pork Chop Kabobs

What You Need:

Pork chops (size and amount preferred)
1/4 cup Extra Virgin Olive Oil
1/2 cup Brown Sugar
2 Tsp Salt
1/2 Tsp Thyme
1/2 Tsp Basil

Because we’re modifying the recipe for tailgating, we’re going to cut up the pork chops into kabobs, so you may want to include vegetables for the kabobs as well. I’m the only one in my family that will eat veggies that have been grilled, so we didn’t, but I think it would be a great touch!
How to Make It:
First, create your marinade by mixing the EVOO, Brown Sugar, Salt, Thyme, and Basil. You can choose to do this at home before you leave or take the ingredients with you but keep in mind the meat does need to sit in the marinade for about 1-2 hours, so it is probably best to prepare it in advance.

Place the pork chops in the bowl and really soak them in the marinade. Then add the marinade and the pork chops to a zip lock bag – or if you have plastic wrap you can simply leave them in the bowl and seal it tightly with plastic wrap. We were out of plastic wrap and didn’t realize it! Be sure to really make sure every inch of the meat is covered.

Place it in the refrigerator for around 2 hours – a little longer or shorter depending on the amount of flavor you prefer. If you’re taking it with you, you can take it in the cooler as it soaks in the marinade!
Fire up the grill and put the pork chops with marinade back in the bowl if it had been transferred to a bag or simply just remove the plastic wrap if not. Take the pork chops out one by one and add them to the grill. Grill time will vary based on type of grill. Be sure to cook meat thoroughly.

If you are cooking vegetables, it is a good time to add them to the marinade on the grill, so they will cook and receive an infusion of flavor!
Once the pork chops are cooked thoroughly, move the marinade to the hottest part of the grill and bring it to a simmer. (If you were cooking vegetables, be sure you have removed them as well.) This will help to stir up additional flavor. Drizzle more of the marinade onto the pork chops.

Now, we would usually be done, but since this recipe would usually require plates and silverware it wouldn’t be ideal for tailgating, which is why I would now suggest cutting up the pork chops into smaller bites and adding them to a kabob! If you cooked vegetables, add them along with the pork chops and enjoy!

We definitely love that we have a bowl we can use on the grill! Not only that, but I can do so much with it! It’s important to note that although it’s extremely versatile, it’s not dishwasher safe.
